Salad with beetroot and orange

Ingredients:

225 g mixture of long purified and unshelled rice
4 big oranges
450 g cleared cooked beetroot
2 loafs of salad chicory
  Salt and pepper
  Sliced chive for decoration

Sauce:

4 table-spoons non-fat natural (unsweetened) yogurt
1 grinded piece of garlic
1 table-spoon wholegrain mustard
½ tea spoon grated rind of orange
2 tea spoons clear  honey

Preparation:

Cook rice, toss it aside and cool.

Above the bowl cut off skin and white layer from oranges, so the juice could flow down in it. Cover juice and put into fridge.

Cut beetroot into small cubes. Mix up with pieces of orange, cover with lid and put into fridge.

Cooked rice mix up with orange juice, salt it and pepper.

Put along the edges of 4 plates salad leaves. Put rice in the centre of plates, and above it put beetroot with oranges.

Mix up all ingredients of sauce and pour salad with it. Decorate with chive
