Sources of sunflower oil are sunflower seeds. Not without a reason we call sunflower the flower of the sun, as the flower itself is alike the sun, besides it is light and heat-loving and in the process of maturing turns its hat after the sun during the day. The quality of the future oil significantly depends on the quality of seeds, level of oil content, humidity and the period of maturation.

Oil obtains from sunflower seeds by means of wringing under the press and extraction. Prior to the wringing process seed peels from the trash, husk and crushes. The percentage of receiving of the raw oil as a result of wringing is not high. Maximum of fat from the raw material can be received by means of extraction processes to which undergo seeds that have passed wringing process (oilcake). In the extraction process one receives raw oil by adding to the oilcake organic solvents which later repel from the received micelle by distillation method.

Raw sunflower oil has pleasant odor and taste, but it can’t be preserved for a long time, quickly becomes muddy and bitter. That is why it is not used in the raw state. Depending on refining method and further assignation oil divides on refined and unrefined one.

Mostly unrefined sunflower oil clarifies mechanically (settle and filtrate). Also it undergoes freezing process, as a result of that sunflower oil remains transparent even in conditions of long term storage under the low temperature. In unrefined oil remains maximum quantity of vitamins and phospholipids. Unrefined oil is rich in vitamins: E (tocopherol), F (linoleic and linolenic unsaturated fatty acids), D (calcitriol), A (retinol) and it is very healthy to use it in the raw sate, for example to dress fresh salads. It is categorically not worth to fry in unrefined oil, because while heating up to the high temperatures poisons generates in it, and besides, it froths and gives to a course unpleasant odor, bitter and burnt taste.

Refine sunflower oil goes through the long way of purification which consists of the following stages: mechanical cleaning, hydration, neutralization, bleaching, freezing, deodorization and nitriding. The stage of mechanical cleaning passes similarly to production process of unrefined oil.

Hydration it is purification process of oil with water (70 ºС) which runs in pulverized condition through the heated up to 60 ºС oil.  

Neutralization consists in extraction of free fatty acids, so that oil couldn’t get an unpleasant smell while frying.  
Next stage of refining is bleaching process, handling of oil with absorbent of the organic origin (special clay) and as a result of which an absorption of colouring pigments takes place.  Presence of separate colouring compounds threatens with oxidation and premature spoilage of the finished product.

Freezing is the cooling action of oil and as a result waxy compounds which are in oil solidify and remove from oil by means of filtration.

Process of oil handling with hot dry steam under the temperature 170 - 230º С calls deodorization. During deodorization process oil rids from harmful organochloride pesticides and aromatic substances which also cause oxidation of product.

Last stage of refining is nitriding process (it is supply of nitrogen during packing).  Oil saturation with nitrogen gives possibility to increase its shelf life without adding conserving agents and creates in bottle nitrogen pillow above the oil which doesn’t let it to absorb oxygen, that is to oxidize and to deform the bottle.

Refined oil perfectly suits for fry and baking, it doesn't change taste and aroma of products, doesn't froth and smoke. In addition in refine oil remains in a sufficient quantity vitamin E which is resistant to high temperature.
