Ingredients:

3 big stems of leek
49 g butter
1 thin sliced onion
500 g cut potato
850 ml vegetable broth
2 tea spoons lemon juice
  pinch of milled nutmeg
¼ tea spoons milled coriander
1 bay leaf
1 egg yolk
150 ml no thick creams
  Salt and pepper
  Green cut onion for decoration

Preparation:

Clean stems of leek and remove green part. White part cut into pieces.

Melt butter in deep pan. Put leek, onion and fry stirring within 5 min. Don't bring onion to brown colour.

Put potato, coriander, bay leaf. Salt and pepper according to your taste. Bring to boil and cover. Leave it on small fire for 30 min. till vegetables become soft.

Let soup cool a bit, take out bay leaf and sieve the rest or blend it to homogenous mass. Pour mass in clean pot.

Mix up egg yolk with creams and small quantity of soup. Pour in pot with soup and blend. Later heat up soup, but don't bring it to boil. Add spices if needed.

Before serve strew with fresh green onion.
