Baked pudding “ocean”

500 g a fillet of cod
225 g steaks of salmon
425  ml   milk
1 bay leaf
1  kg   potato
60 g cleaned shrimps
60 g   margarine
25 g   flour
2-4 table spoons white wine
1 tea spoon cut fresh dill
2 table spoons capers
  Salt and pepper


Put fish in the pot and cover with 300 ml of milk. Add bay leaf, salt and pepper. Bring to boil, cover with a lid and cook on small fire 10-15 min.
Peel and cut potato and cook in salted water till softness.
Take fish out of milk. Don't pour milk; if it became less milk add more up to 300 ml. Mash fish, remove bones. Put in not deep fireproof tray. Add shrimps to it.
Melt half of margarine in the pot, add flour and cook within 1 min, stirring at the same time. Slowly pour in milk and wine. Bring to boil, put dill, capers, salt, pepper and cook on small fire till it becomes dense. Pour with this sauce fishes and mix up.
Strain off potato and mash. Add rest of margarine also salt, pepper and such quantity of milk, so it could be pressed out of forming packet.
Place puree in forming packet, put star-shaped nozzle and press out puree above the fish. Bake in the heated up to 200 ⁰С oven within 25 min. Serve it having decorated with the whole shrimps.
