Backed aubergines

2 aubergines
4 sweet red peppers
2 table spoons of sunflower oil “Mayola”
1 table spoon of chopped basilica
2 table spoons of cut thyme
150 g of feta
  Salt and pepper per taste


Heat oven up to 220 degrees. Wash aubergines, cut the ends.  Slice vegetables into thin pieces, salt and leave for 30 minutes. Then wash these pieces and dry with paper towel.
Cut peppers in halves, remove seeds and pedicles. Put halves with peel up on baking tray and bake in oven within 15 minutes.  Let peppers cool and remove the peel.
Fry pieces of aubergine from all sides in sunflower oil “Mayola”. Crumble feta.  In heat – proof form put in layers aubergines, pepper and feta; strew each layer with verdure, salt and pepper.
Bake the dish within 20 minutes in heated up to 180 degrees oven.
