Couscous with vegetables

Ingredients:

2 table spoons sunflower oil
1 roughly cut big onion
1 chopped carrot
1 chopped turnip
600 ml vegetable broth
175 g  couscous
2 peeled and quartered  tomatoes
2 chopped vegetable marrows
1 chopped sweet red pepper
125 g cut green leguminous bean
  zest of 1 lemon
  pinch of milled turmeric
1 table spoon chopped parsley
  Salt and pepper
  Twigs of parsley for decoration

Preparation:

Warm up oil in the pot and fry onion, carrot and turnip within 3-4 min. Pour in vegetable broth and bring to boil. Cover with a lid and cook on small fire within 20 min.

Put couscous in the bowl and cover with small amount of water. Mix up, so grains could swell and separate.

Put in the pot tomatoes, vegetable marrows, sweet pepper and bean.

Mix up couscous with lemon zest and turmeric. Put couscous in steamer and place on pot with vegetables. Cook vegetables and steam couscous during 8-10 min.

Put couscous on plates. Put vegetables above and pour a little bit with water in which they were cooking. Strew with parsley; decorate with parsley twigs and serve.
